Hand picked in the early morning, the grapes were softly pressed to tank and settled for 2 days. After a long, cool fermentation the wine stays on its fine lees for 5 months until bottling.
Fresh lime citrus nose, with ripe stonefruit and tropical notes and hint lemon grass. Green apple and ripe citrus characters on the palate with cleansing acidity and a nice streak of minerality on the finish.
